Is the moisture sensor food-safe?

I'd like to use the moisture sensor to alert me when the level in my espresso machine's water tank has dropped and needs to be refilled. Is the moisture sensor--and specifically the probes, which will be actually touching the water--food-safe?

You should be able to alligator-clip a food-safe probe to each of the two copper pads at the bottom of the moisture sensor, and get good results -- it's just a matter of electrical resistance, and a couple feet of wire shouldn't be significant.  Don't separate the two probes by much distance.
